Before leaving for vacation, I had to use up a few ingredients in the fridge. These tacos are vegetarian but still filling thanks the the protein from the hummus and the chew of the kale.
Start by sautéing kale in a pan with whatever seasoning you wish. I think I used garlic powder, paprika, and salt. Once that’s done, use your burner to char up some corn tortillas. Next fill em up: spread the tortillas with hummus (I used a cilantro jalapeno variety), top with chopped kale, and then garnish with sliced radishes and crumbled feta.
I didn’t have any meat, but this would be great with some grilled chicken. That said, I really didn’t miss the meat here – who woulda thunk it?
