Lemon Blueberry Cardamom Muffins

Since this past weekend was sandwiched between two power-packed weekends (Vegas the weekend prior, DC the weekend after), I wanted to lay low.  I also hear there’s a blizzard a-brewin’ so I wanted to do a bunch of cooking in case I find myself stuck in my apartment.  I knew one batch of muffins would keep me well fed for several days and it gave me the chance to test out a flavor combination I had in mind.

I used this trusty, basic recipe as my muffin base and added the zest of one lemon, 1.5 teaspoons of ground cardamom, and a whole slew of blueberries.  It was so relieved to find that it was a perfect combo!  The blueberries were nice and juicy – way better than a blueberry muffin you pick up on the street.  The blueberries and lemon give the muffin a tartness that makes these muffins perfect for getting you up and on the move on a work morning.  The cardamom is very aromatic and has a warm taste that brings those citrus into winter wonderland territory.
