Peeps Rice Crispy Treats

Just before Easter, I saw my friend making rice crispy treats with peeps instead of normal marshmallows. Not only did it look colorful and fun (she did it as a cute holiday activity with her kids), it looked like the whole thing was done in a single dish. It didn’t seem possible that I could make better looking rice crispy treats AND not have to deal with cleaning a pot. I DM’d her immediately and she told me it actually worked. I went straight to the store to pick up the 3 total ingredients and am happy to report that this TikTok-esque recipe (this wasn’t a viral recipe…but it feels like it should have been) was as easy, cute, and tasty as it looked.

Just place peeps (any kind, ant color) in a single layer on the bottom of a 9×9 baking dish. I used 16 peeps but 20 would have been better. Cover the peeps with 4 c. rice krispy cereal (note: I didn’t measure out the cereal – I could tell I was light on the peeps so I just poured cereal until the ratio looked right) and top with thin pats of butter. Bake at 375 for 8 minutes, remove from the oven and stir everything together. Top with the most fun sprinkles you can find (I used these because the colors were perfect for Easter and the price was right) and press down into the dish to set.

I love how these looked – such a fun addition to an Easter table. They’re also so easy to throw together that 1) kids can help and 2) you could make this in 10 total minutes and bring to a friend’s if you totally forgot to hold up your end of the potluck bargain.
