Yet another pasta recipe has gone viral on TikTok. This one uses boursin as the base for the sauce and I gotta say, the result is way better than the feta pasta – it’s tangy but not sooo tangy and takes less time than something that requires baking. I used this recipe and tweaked slighty. Perfect.


You can use any skillet, but I recommend a cast iron because it’ll give the lemons that gorgeous blackening you want. Start by zesting a lemon and setting the zest aside. Cook some pasta according to the package (I used a nice long noodle) and let it chill while you make the rest. Begin sauteeing one chopped onion in the skillet with butter. Add that lemon to the pan, sliced in half, flesh side down. Add a few cloves of minced garlic, salt, and pepper and let it all soften and get aromatic up in there. Deglaze with white wine (I had some leftover sauvy b in the fridge) and add a package of boursin, stirring to turn it into a creamy sauce. The recipe says to add some heavy cream here, but I would just do a splash of milk – you don’t want it too thick; honestly, you could just add a bit more wine instead. At this point, your lemons should look beautiful so pick them up and squeeze their juice into the sauce. Add the pasta, the lemon zest from earlier, and some pasta water if necessary. Toss to coat. Top with fresh parm and some toasted pine nuts.


With the brightness of the lemon, this might seem like a more summery pasta, but I think all pasta is good all year long. Served with some steak, this would be an ideal Valentine’s Day meal hint hint. Easy, elegant, and comforting.
