Chicken Soyaki Tacos

Would you look at that! Another TikTok recipe that slapped. this one offers an Asian twist to your Taco Tuesday and could not be easier. Here’s the original video – I didn’t follow it exactly because I got lazy, but even without dipping the tortillas, it was pretty solid. My beau was skeptical and was hoping for Mexican flavors when it came to our weekly taco meal, but in the end he at ate about 4 so I think it’s safe to say he came around.

Place boneless skinless chicken breasts in a slow cooker and cover with Trader Joe’s soyaki sauce. You likely won’t need the whole bottle. Cook on high for 3.5 hours (or low for 7). A few minutes before you’re ready to eat, prep a spicy slaw by tossing togetther slaw mix, mayo, vinegar (red wine or apple cider), and sriracha to taste. Shred your chicken and assemble tacos by piling the chicken, slaw, shredded mozzarella, sliced scallions, and furikake into a tortilla. Serve with a bowl of the sauce from the crock pot for dipping. And believe me, the dipping makes a difference.

I loved having something different for Taco Tuesday. Few ingredients, little effort…this whole meal feels like one big hack and I’m here for it.
