We know I love Spam. Gimme some musubi any and every day of the week. Spam and eggs? Sure thing. And Spam fried rice is an obvious yes. So when a Spam commercial came on tv and my beau volunteered “That looks good,” I jumped at the opportunity and it became the centerpiece for our next home cooked meal. I happened to have a perfect amount of leftover rice in the freezer and Spam in the pantry so this was meant to be.
Start by pan frying one can of cubed Spam in a quick suace of oyster sauce, soy sauce, sesame oil, garlic powder, and honey. Once done, set aside on a platter and use the same pan to sauté one small chopped onion in oil until it’s translucent. Then add in your quick-cooking veggies. You can use lots of things here, but I went with the trio I had in the freezer: frozen corn, frozen peas, and frozen edamame. (The edamame was shelled and I did a quick 3-minute cook in boiling water first.) Push all the veggies to the side of the pan and scramble two eggs. I stirred the eggs the entire time so they were nice and fluffy – no rubbery nonsense here. Mix the eggs and veggies together then add your leftover rice and some soy sauce, tossing everything together til it’s nice and warmed through. Add your Spam back to the whole dish and serve. Serve with toppings like furikake, sriracha or chili crisp, and scallions.

The platter of fried rice was massive and we dang near polished it off because it was just that good. From tv to table we made this meal happen. Congrats, Spam, your advertising very much worked.
