Chili Verde Sausage Tacos

There is always a package of chicken sausage in my refrigerator. It’s already cooked so it takes no time to warm up/prepare, is easy to throw into hashes or pastas, comes in tons of varieties, and is always a yes from every member in my household. Seemore’s is a favorite brand – they’re female-founded, responsible, and some of the most delicious. Typically I toss sliced sausage into shredded brussels sprouts or pasta dishes with lots of other veggies and cheese but decided the chili verde flavor would work really well in tacos. I was right. I offered up a few toppings so you could kinda mix and match and I honestly don’t know what my favorite combo was.

Do yourself a favor and prep your toppings first: I made a quick slaw with sour cream, a teeny bit of mayo, red wine vinegar, and some of TJ’s citrus garlic spice. I also set out salsa, avocado, chipotle crema, sour cream, and fried onions. For the actual cooking, butterfly the chili verde sausage and kinda mush the filling a bit before slicing into pieces. Basically, you don’t want super clean rounds – this way the meat with spread when you build your tacos and you’ll get good coverage. Brown the sausage in a pan and set aside. Finally, make your tortillas by melting cheese right on them. I used whole wheat tortillas and shredded mozzarella. I placed the cheese-topped tortilla in a pan, added a bit of water then covered with a lid to melt the cheese. Then I removed the lid and let the tortilla bottom firm back up. (We don’t want it soggy from the water that we needed to make it melt.) This method worked well but I think it would totally work (and be easier) to simply put all tortillas on a baking sheet, top with cheese, and stick in the oven for like 3 min total. I tried one taco topped with avocado, slaw, and chipotle crema. The other was avocado, sour cream, salsa, and fried onion bits. Both were seriously yummy.

The melted cheese on the tortilla was kind of a game changer. Mental note to do this way more often. I know mozzarella seems like a random choice, but it just worked.
