Taco Tuesday happens in this house with.out.fail. Just because my beau was out for drinks doesn’t mean I was going to slack of…it did mean I could indulge in some protein that doesn’t quite fall within his wheelhouse. Albert pretty much avoids tofu on principle, but when done right, it’s great. And since I used the jicama “tortillas” from Trader Joe’s, these were downright healthy.


Cut the tofu block into wide strips and pan sear it in enchilada sauce that you’ve jazzed up with a bit of salt, garlic, oregano, and onion powder. Once the tofu has a nice crispy edge, serve it up in a jicama wrap with avocado, cheese, and micro greens. Serve with a hot sauce crema (sour cream mixed with hot sauce) on the side for dipping.
