Sausage brand Brooklyn Cured is out here selling links in some unique flavors. I like a brat or an Italian sausage as much as the next gal, but it was fun to see a Korean-style BBQ pork flavor. This would be great served in a bun, maybe with kewpie mayo and cucumbers or chopped kimchi for crunch. I decided to go in a different direction and removed the casing to serve it crumbled and bowl style.

Get some rice cooking in your cooker and while that does it’s thing, remove the sausage from it’s casing, crumble it, and brown it. Once that’s done, drain it on a paper towel and set out all your accoutrements: some green veggies (I used the steam-in-bag European blend from Whole Foods), kimchi (whatever brand you prefer), micro greens, slided avocado, Sir Kensingtons gochujang sauce, and Bachan’s Japanese bbq sauce.

There are quite a few cuisines represented here – Korean, Japanese, French – but my goal was not to create an authentic tribute to any specific one. Rather, I was looking to play around with flavors and create something comforting that felt best eaten on the couch in a giant messy bowl. Success.
