Gobble Gobble 2024

Months ago I saw a Food52 post on IG for an easy 3-ingredient appetizer that seemed almost too simple. When I first mentioned it, some family members who will not be named were concerned it could come off as a bit Southern-white-trash. Well get that thought right out of your head because this is a fabulous pop-able snack. The components may be cheap basics, but it just WORKS.

Place a slice of pickle (kosher dill works well – you want it to have that briny punch) on top of a Ritz cracker. Our pickles didn’t have a ton of girth so I put a couple small slices on each cracker. Also, these you’ll want to slice vs. using pre-cut pickle chips, which won’t be quite thick enough. Place a slice of mild, melty cheese on top of that. (I used Munster.) I highly recommend using a deli sliced cheese so you can quickly and easily fold it into quarters, which is the perfect size for one of these – no slicing required. Put in a 350 oven for about 5 minutes. HOT TIP(s): Eat them quickly, they’re way better when the cheese is warm and the cracker crisp. And try for bigger pickles because a single slice looks nicer than the multiple small ones – but don’t stress because it tastes good either way.

You probably know by now that I always have a backup appy, and this time it was mini buff chick baked egg rolls, which were a tasty as always. And we had some kielbasi and shrimp cocktail, per my beau’s request, but there’s no pic of that because it went quick!
