Chicken Pickle Appy

For New Year’s Eve we invited a few neighbors who happened to also be tethered to their apartments with toddlers. I was happy to entertain but after the rush of the holidays and some general life craziness, I really just didn’t want to put any real effort into it. I laid out a full spread but didn’t pull out a single knife. Prep was easy (especially since most were frozen snacking from Trader Joe’s) and cleanup was a breeze. I’ll give myself credit for one of the appetizers though. I may not have really cooked any of it, but I came up with the concept and assembled. Considering they were all gobbled up, I deem it a success and entered 2025 by patting myself on the back.

It’s just three ingredients: frozen chicken nuggets (I like the ones from Trader Joe’s or Costco) cooked according to the package directions + pickle chip + burger sauce (make your own, buy TJ’s magnifisauce, or use one of the Sir Kensington’s everything sauces – we went the TJ’s route). THAT’S IT. Could not have been easier or, frankly, tastier.
