When you want to simply assemble supper but you still want to feel like you made something new. For me, the easiest way to do that is with some sort of pasta. I grabbed a bunch of stuff from Trader Joe’s pasta and made magic happen.

This one with leveraged their lemon pepper chicken and veggies in garlic medley (both from the refrigerator section, though the veggies are seasonal for fall). I tossed it all with a large macaroni-ish pasta and made a sauce using TJ’s walnut Gouda (grated) that I mixed with milk, smoked maldon, and pepper and simmered in a sauce pan.

It all came out quite yummy and because I somehow managed a light, thin cheese sauce, it didn’t feel heavy despite all the fall veggies which are the opposite of bright. This is one of those use-what-you’ve-got recipes. If you don’t have these veggies at Trader Joe’s, just toss in leftover roasted onions and veggies – any kind will do. And you don’t need walnut Gouda; just get you some Gouda, period.
