Arugula Heart of Palm Salad

This salad started with three ingredients…but then I kept seeing things I. My pantry I wanted to throw on. Don’t worry, this only brings the ingredient total to about 5 so it’s still silly simple.

On a bed of arugula, lay sliced hearts of palm (so pretty if cut at a diagonal) and crumbled blue cheese. Then scatter capers and crispy shallots over the whole thing and drizzle with good olive oil, flaky salt and cracked pepper.

This salad feels pretty fancy – and it doesn’t even need real dressing! HOT TIP: I added a basic chicken salad and avocado to make this a full meal the next day for lunch.
