Slow Cooker Sirloin

The temps have dropped…drastically. We are firmly in crock pot season. We are also in solo parenting season – it’s only for two days, but having supper ready with most dishes cleaned makes for a much smoother home-to-school-to-home-to-supper-to-bath-to-bed transition.

Into a crock pot, dump stew meat (I used cubed sirloin because it’s what they had at Trader Joe’s), 1 can of tomatoes, a little water (maybe half the can – enough to get the meat mostly covered but not swimming), 1 sliced onion, chopped carrots, quartered cremini mushrooms, and seasonings (I used garlic powder, salt, white pepper, and herbs de Provence). Let it go on low for 7.5 hours.

The meat fell apart but the veggies didn’t – it was perfect. I served it over mashed potatoes, which couldn’t have been more perfect. It was comforting and flavorful, and I kinda can’t ask for anything else on a freezing, busy night. This is also a good one for kids since it’s not all blended. Finn loves the meat and mushrooms and he was able to eat that and avoid everything else. (Yes, I’m rolling my eyes too.)
