We weren’t able to do much stocking up before the snow storm and by Monday, we were running low. I had a few random items and desperately needed a vegetable, which I hadn’t seen in days. I can’t believe I’m about to type this, but ChatGPT to the rescue. I gave it a list of ingredients and it helped me come up with a recipe.

While quinoa cooks in the rice cooker, prep the veggies. I sliced up carrots and simmered them, covered, in 1/4 c. (maybe a bit more) of water with salt for about 8 minutes. I removed the lid and let the water cook off before adding a large tablespoon of butter and a nice drizzle of honey. Toss it all around and cook til they’re nice and glazed and remove from the heat. Then, in 3 minutes, I cooked up a package of steamed beets (new in the produce section at Trader Joe’s!) in the microwave. Once the quinoa was done, I tossed it gently with the veggies, topped with crumbled blue cheese, added some fresh black pepper, and drizzled a liiitle more nice olive oil and honey over the top.

The end result was great. Even Albert, who is wary of things like beets, ate a few helpings. I think it would be even better with goat cheese and that will be for next time…because there will definitely be a next time. Necessity – and apparently AI – is the mother of invention.
