Turkey Tenderloin Bowl

I’m not sure what to call this bowl and don’t even know wha cuisine bucket it falls into. I do know that I threw it together with a bunch of pre-prepped microwavable ingredients and it worked.

For the base: frozen microwave rice from Trader Joe’s. For the protein: turkey tenderloins from Trader Joe’s. For the vegetable: broccoli and haricots verts that are fresh and steamable in the microwave, also from Trader Joe’s. I tossed the veg with some good olive oil, maldon salt, and chili flakes. For toppings: avocado, pepitas, and labneh that I found at – you guessed it – Trader Joe’s.

If you didn’t pick up on it, this meal would never have happened if it weren’t for my good man Trader Joe. This was the kind of meal that I’m happy to enjoy as a big mess with every one of the toppings, but it can very easily be done as a traditional plate where you pull back on some of the toppings. I love that I can feel so accomplished with a ton of meal components…but I did nothing more than push a few buttons on the microwave.
