Cilantro Lime Rice

Why serve regular white rice when you could easily serve cilantro lime rice?  Stupid question – you would never serve boring white rice when cilantro lime rice is an option.  I got this idea from good ol Chipotle who claims to serve cilantro rice. If you tell me you taste anything other than plain white rice when you eat there, I would have to say you’ve been brainwashed by the Chipotle empire. I set out to accomplish where Chipotle failed. They were too afraid of real flavor so I stepped up and created the cilantro lime rice they should have made.

Let the rice cook away in the rice cooker/pot and when it’s almost done, chop up a small clove of garlic. (Or half a clove…I don’t really know how much rice you’re cooking, so I can’t give you an exact quantity here; use your best judgement.)  Then melt some butter and once it’s melted, stir in the garlic and some lime juice.  Pour the mixture over rice along with fresh cilantro and fluff it all together.

I served mine beneath a pork loin that I cooked in the crock pot along with onions, garlic, and a jar of salsa verde.
