I love pizza but feel like a terrible person if I serve it during the week. I have to set some guidelines; otherwise, like I would with mac and cheese, I could eat pizza every single day. As a substitute I used a spaghetti squash as the vessel for all that delicious pizza flavor. I was not disappointed.
First, standard spaghetti squash protocol: Pierce the squash with a knife and microwave it for about 5 minutes on 80% power so it’s easy enough to cut. Then slice it in half and scrape out the seeds. Place, cut side down, in a dish with an inch of water and microwave on high for 10 minutes.
Now, to make it pizza squash (a much better cartoon name than Spongebob Squarepants, if you ask me), start scraping the flesh of the sqush with a fork til it’s nice and stringy. Then mix in ricotta, marinara sauce, and pepperoni. Top with shredded fresh mozzarella and pop in the oven until the cheese on top gets bubbly. No measurements – whatever looks good.
And now you have pizza you don’t have to be ashamed about eating on a schoolnight!
