Welcome back from the Thanksgiving break! My weekend was extra long – I went home on Wednesday and didn’t get back til Monday night. I hope you can forgive me for being MIA on the blog – I was too busy loving family time. But now that I’m back to work, I’m back to blogging – lucky us!
As always, I was in charge of apps for Thanksgiving. And, as always, I made one experimental app and one backup. For the backup, I made cheesy tailgating bread, which will henceforth be known as cracky bread because yet again I was asked if i made it with crack it was so good.
For the new appetizer, I wanted something light to balance out the bread and overall gluttony of Thanksgiving. I went with these spicy mango cucumber skewers but used serrano peppers because that’s what I could find. This was super easy to put together. Once your mango and cucumber are cut into chunks, just cover them with the lime and hot chile dressing and you’re good to go. I estimate this took 15 minutes to put together…and it only took that long because somehow none of us had ever cut up a mango.
Warning: the longer this dish sits in the fridge before serving, the spicier it will be. For me, the fresh fruit and spicy wake-up power of the hot pepper was a great way to avoid feeling dull and heavy with all the potatoes and meat that were soon to follow.
