Small Kitchen Cooking: Cauliflower Rice Burrito Bowl

I’ve used cauliflower to replace the rice in fried rice – that seems to be the replacement go-to.  But now I wanted to see how it worked to make the swap in another famous rice dish, the taco bowl.  Prep is exactly the same, just use cauliflower rice instead of regular rice as the base of your bowl.  Easy, right?

Here’s how you’re going to take this to the next level: add sofrito to your cauliflower rice while you’re sautéing it. Sofrito can be made a bunch of different way depending on what region you’re in, but basically it’s a tomato based sauce (a cooking base, really) with onion, garlic, and paprika. Cool people make sofrito themselves; I found it in the Mexican aisle in the most basic of grocery stores (next to the black beans). Simply stir it into the cauliflower rice as it sautés in olive oil and you’ve got instant flavor.

Ingredients:

  • Cauliflower rice (you can sauté this with diced onion in a bit of olive oil with cilantro and salt if you want, that would be good)
  • Sofrito
  • Ground beef/turkey, browned with taco seasoning
  • Black beans
  • Shredded cheese
  • Sliced avocado
  • Dallop of sour cream

Between using cauliflower instead of regular rice, white meat only turkey, and low-fat sour cream, this was a super healthy meal.
