Taco Tuesday is a staple in our house because it’s quick and easy to pull together with minimal clean up. When you use a crock pot to prepare the protein, this easy meal gets even easier.
Layer sliced onion in a slow cooker and top with boneless skinless chicken breast. I used 2 lbs of chicken (3 very large breasts) and it easily serves 4, maybe 6. Top the chicken with garlic powder, chili powder, and salt. Add one small can of green chiles, the juice of one lime (after juicing, slice it and add it to the pot for extra flavor), and one Mexican-style beer. Corona, Modelo, or anything similar would work. I used Trader Joe’s version, Trader José. Cook on high for 2 hours or low for 4. If you like it super soft and shredded, leave it in a bit longer (30 min).
As for assembly, I served the chicken inside charred corn tortillas with cheese, avocado, and a slaw made with sour cream, mayo, and Trader Joe’s chili lime seasoning.
The beer flavor really came through. It’s a light beer so it’s just a slight yeast vibe coming through. Because chicken is such a mild protein, the beer gives the tacos some depth of flavor. This is a perfect taco recipe if you’re tired of doing the standard taco seasoning or if you’ve got fellow diners who are sensitive to spice. Just because there’s no jalapeño doesn’t mean there’s no flavor. If you’ve got leftovers, this would make a bangin rice bowl, but you probably didn’t need me to tell you that.
