This week has been all about getting back into a routine after Vegas. I’m trying to cook healthy, work out, and cut out booze for a nice little detox. This Saturday we’ll be heading to our niece’s 3rd birthday party so there, so there will be a nice dose of cuteness punctuating our weekend.
With my beau away at a bachelor party, I had some time to myself when I got back from Vegas. I also had to get out of the house for a few hours while the cleaning lady was there. I decided to go to a fun workout class and with time to kill before it started, I took myself on a brunch date. I went to a great diner (peak old school NYC) and had a lovely time sipping coffee, eating eggs, and scrolling through Instagram.
I have heard good things about the crispbread from Trader Joe’s and finally tried it. They’re thin but dense – packed with seeds. They’re also gluten free if that’s your thing. This type of cracker is big in Scandinavia so I took inspiration from Norwegian smørrebrod and topped mine with some homemade shrimp salad. It’s perfect if you’re looking for something toast-like but don’t want to deal with a toaster (like if you’re packing it for lunch) or if traditional crackers just don’t cut it because you don’t want to make a million mini bites that break while you’re spreading on the topping (these are larger and super sturdy). I still have a few pieces left so I’m thinking my next topping will have to be goat cheese and everything bagel seasoning.
We woke up to find we’d gotten a very light dusting of snow last night. This is the kind of snow I actually like – it was super sunny on my walk to work this morning so I wasn’t freezing and could actually appreciate its beauty. I noticed, however, that my nephews would have appreciated all the road work being done in our neighborhood – they’d go gaga for all the construction vehicles and men working!
