Chimichurri Steak Tacos

The day finally arrived! This Is Us, one of my absolute favorite shows is BACK! This show comprises half of Terrific Tuesday – our weekly event celebrating all things that begin with T: This Is Us, Tuesdays, and Tacos. (And Tess. Why not celebrate me while we’re at it?) We were in for a 2 hour season premiere so we had to do something special when it came to the tacos and steak fit the bill.

I made the steak in the sous vide with whatever grill seasoning I found in the spice cabinet. 135 for an hour and a half. When it was done, I simply seared it off in a cast iron skillet to give it a nice crust. Finally, I sliced it into the thinnest strips I could muster because it’s gotsta be thin if it’s goin in tacos. The star topping is the chimichurri sauce, which you make in a food processor by pulsing together fresh parsley, garlic, red wine vinegar, oregano, olive oil, and salt. I also made a quick salsa with diced cucumber, radish, avocado, lime. (Note: This salsa is great with cilantro and jalapeño, but if you do that, recognize that cilantro may compete with the chimichurri so it’s good as an either/or option on the taco bar, ya know?) Finish off the spread with your standard taco toppings: cotija cheese, pickled red onions, and sour cream.

These tacos: good. Most importantly, I learned that chimichurri is a great (albeit very garlicy) condiment that goes well on many things. It made me want to grill things…chicken, veggies, more steak…just so I can put this sauce on it. The next day I mixed it into mayo and slapped it on a sandwich and it was wah wah wee wah wah. (I haven’t even’t even watched the new Borat yet, but knowing it’s waiting on my Prime sends me straight to the voice, apparently.)
