For my most recent Sunday supper, pasta was going to be the star so we needed a simple chicken as the protein. I followed this recipe and it was as easy as can be. Just combine 1/4 c. olive oil, 1/2 c. balsamic vinegar, 2 tbsp soy sauce, 2 cloves of minced garlic, 2 tsp oregano, and 1/4 tsp black pepper. Pour the marinade over 4 chicken breasts and let sit for 10 min before baking at 400 for about 22 min (if you’re using thin cut breasts – at least 25 if you’ve got thick boobies).

What a crowd pleasing, pantry staple-based, quick supper. The flavor makes it super adaptable so it goes with a ride range of cuisines.This was great in the oven but would be excellent on the grill. Thankfully, grilling season is just around the corner.
