Honey Mustard Salmon Bowl

V really likes honey mustard (can’t blame him – it’s an elite condiment) and also loves salmon, so for a recent supper I combined the two. I let him mix up the honey mustard himself and he loved being part of the process. I’m sure that had something to do with how much he enjoyed the meal…but also, it was just good.

Coat a salmon filet with honey mustard (Dijon mustard, honey, mayo, salt, pepper, and Finn added a little dill) and bake. For all the bowl fixins, I set out rice, chopped haricot verts, cheese options (blue, cheddar, or mozz), crispy shallots (from TJ’s), and ranch.

This meal is nothing fancy and took under 20 minutes (thanks to microwaveable rice and haricots verts). We love an easy bowl night.
