This week, my office held a sandwich making competition. I was woefully unprepared and threw something together last minute with no idea how it would taste until taking the first bite on camera. Luckily, my last minute “refrigerator surprise” sandwich was quite tasty! So tasty, in fact, that I recreated it on purpose again that week.
Spread a flour tortilla with buffalo hummus (thanks, Trader Joe), top with swiss cheese, sliced grilled chicken, julienned carrots, and avocado. Roll it up and press it in a pan with some butter.
The carrots offer a much needed crunch to offset the creamy hummus and avocado. I just chopped up baby carrots like match sticks – easy peasy. And it turns out, swiss cheese is the perfect complement to buffalo hummus. Blue cheese would be too expected, but this still has a sharpness to it.
