Boursin Linguine

My kid loves creamy pasta and mushrooms. Can’t get him to eat a vegetable, but mushrooms are great. This is the easiest way to do both. And by easy, I mean this is a 15-minute meal. So yea, it’s the easiest way. (And for the record, Finn proclaimed “Mommy, I loooove this pasta!”)

Get your pasta cooking – I used linguine. While that’s going, chop half a sweet onion and sauté with sliced cremini mushrooms, salt and lemon pepper. Once the onions are translucent, add a package of Boursin (I used the garlic and herb variety) and let it melt while adding milk to get it to the right consistency. Once your sauce is ready, use tongs to transfer the pasta to the pan and toss. You may need some of the pasta water so just keep that in mind. I microwave steamed a package of broccoli and tossed that in with the pasta once it was in the serving bowl. If you have a non-broc kid, make sure to microwave on the low end of the package directions (or under) so that it doesn’t break apart and incorporate all through the pasta when you toss it. That way you can pick around it for him. I topped the whole thing with some of Trader Joe’s grilled balsamic chicken (from the prepared section), some Parmesan, and some maldon salt.
