One Pot Broccoli Pasta

Hey pasta you’re so fine you’re so fine you blow my mind hey pasta!  Hey hey hey pasta!

See what I did there?  I used a one hit wonder to introduce a one pot wonder.  I’m just so darn witty.  Here’s the thing: one pot pasta dishes are popping up all over Pinterest.  It was time for me to try one.  The winner was this creamy broccoli fettuccine.  I’ll admit, my version didn’t come out quite as creamy, but the flavor was all there.  I was hesitant to believe that you could treat pasta as a “set it and forget it” type meal, but it really did work, AND I used the dried pasta, not the fresh like the recipe’s authors.

Because the sauce is made from so few ingredients (just stock, milk, and parmesan), you can really taste the notes of garlic.  It won’t give you dragon breath because the minced garlic was sitting there all mellow the whole time the dish cooked, but the flavor will be there in the background so make sure to include it.  Other great things about this dish (besides how easy it was): the broccoli cooks perfectly and the cheese you saved to sprinkle on the top will save you if the sauce isn’t super creamy.  After setting and forgetting my side dish, I cooked my equally easy salmon that was topped with a mixture of whole grain mustard, honey, and a little mayo.
