When Karen wants to cheer Regina up she offers “You want to do something fun? You want to go to Taco Bell?” The fact that Taco Bell is Karen’s idea of fun is how I know she and I would certainly have been in the same clique at school, despite her lack of IQ. The Bell is my guilty pleasure, but there aren’t a ton of locations in NYC…plus it’s maybe not the healthiest. Maybe.
If you want that quick Mexican fix, try this recipe for baked chicken taquitos. Baked = healthy: because we can’t still eat the way we did in high school or sweatpants will be all that fit us and someone will yell “you can’t sit with us!” in our faces. Not cool. I like to use the hot RO*TEL tomatoes, but if you’ve only got the regular ones on hand, use those and add some hot sauce. And if you don’t have RO*TEL, just use diced tomatoes, green chiles, and hot sauce. More jars, same result. Instead of serving with guac, I like to serve with a cilantro crema. Just mix sour cream, cilantro, and lime juice. If you took my advice and used the spicier tomatoes, this is the perfect cool down complement.
