Chicken and Zucchini in Peanut Sauce

Usually, when you build a meal around a jarred sauce, also known as taking the easy way out, it’s some sort of pasta with marinara.  That doesn’t have to be the case if you can shop at Trader Joe’s.  They have tons of jarred sauces for all sorts of cuisines.  I recently picked up a jar of their peanut sauce and wanted to use it for a full meal instead of a dip for satay skewers.

Give a large chop to zucchini and onion and saute along with chicken and a little olive oil.  I cut my chicken up into nugget sized pieces so it would cook faster.  That’s just my recommendation.  Take it or leave it.  Once the chicken is cooked through, add the peanut sauce and warm through.  Add some crushed red pepper flakes and bring to a simmer.  Serve with sliced scallions over rice.  If you don’t have a Trader Joe’s, it seams easy enough to make peanut sauce using peanut butter, sesame, and soy sauce.  There are easy recipes all over that new fangled thing they call the internet.  Chicken and rice is such a typical weeknight staple…it’s about time it got a little Thai flair, don’t you think?
