Falafel Avocado Sandwich

On Sunday I was getting close to that lunchtime point of no return.  I had gone to a gym class in the morning and by the time I was done showering, getting dressed, and making a few phone calls, it was almost 1:30.  I pretty much needed to eat immediately or I would risk ruining my supper.  I’ve been in this position before.  I think “ok I’ll just grab something while I’m out running errands.” But that usually means I wind up getting something at 3 PM and am then not hungry for dinner til way late.  Not ideal.

I decided I needed to find something in my [pretty empty] fridge so I could maintain normal meal times.  I had half an avocado leftover and knew that was going to make it onto the menu somehow.  Then I found Trader Joe’s frozen falafel in the freezer, along with some hamburger buns.  Finally, I had a little cilantro chive yogurt dip left (also Trader Joe’s).  Those four ingredients made for a perfect sandwich.

Microwave 3 falafel.  This takes a whopping minute and a half.  Note: the package will tell you to cover the falafel with a damp paper towel while you microwave them.  Don’t skip this  step.  The one time I didn’t do this, the falafel came out dry and not so great.  It makes a world of difference.  When assembling the sandwich, I kind of squished the falafel a bit to make it more like one big burger patty.  Place them on the bottom of the bun, top with avocado, and then cover with the top half of the bun that you’ve smeared with the yogurt dip.

I was surprised by how satisfying this lunch was.  This is actually a great substitute for a veggie burger.  It’s also a great way to enjoy falafel without strictly Mediterranean flavors.  Best of all, it’s great to make in a pinch so you won’t screw with you supper time.
