Taco Tuesday doesn’t have to mean actual tacos, just an approximation of sorts. Recently, we ditched the tortillas and made quinoa taco bowls. All the ingredients of a taco, just a little less messy and healthier (thanks the the rice/quinoa swap).
While the quinoa cooks, start browning ground turkey with taco seasoning (chili powder, garlic powder, paprika, cayenne, onion powder, dried oregano, salt, and pepper). While that’s going, mix your chipotle crema (blend sour cream with chipotles in adobo). Now its time to assemble. On top of the quinoa, place the ground turkey, avocado, black beans, cotija cheese, a dollop of chipotle crema, and crushed tortilla chips for crunch.
Bonus to not going with traditional tacos: these leftovers are way better.
