Spinach with Cotija Cheese

Sometimes, you’re not going to make creamed spinach.  Maybe you don’t have the time or perhaps you’re watching your waistline.  Well, I’m here to tell you that I’ve got your satisfying alternative right here.

Just cook up some frozen spinach.  When it’s done, add some salt, pepper, crushed red pepper flakes, and cotija cheese to taste.  Cotija is salty so wait until you’ve got what you consider to be enough cheese before you decide how much salt to add.  Nothing can truly replace creamed spinach, but considering how much quicker this comes together (it’s a 6-minute side) and how much healthier it is, I would consider it a great substitute.  Also, if you happened to buy a huge bag of cotija cheese for one Taco Tuesday night, you’ll need ways to use it up.
