BBQ Shepherd’s Pie

Once again, the demo station at Trader Joe’s hooked me.  They were sampling their take on shepherd’s pie and I just had to make it for myself.  All you have to do is cook two of their frozen items, the bbq pulled brisket and the mashed potatoes and put them in a casserole dish (bbq on the bottom, potatoes on the top, like a shepherd’s pie).  Now, this is obviously the type of thing you can make from scratch, too.  you could prep the bbq in the crock pot while you’re at work, for instance.

I must admit I was staunchly opposed to frozen mashed potatoes.  They always taste so institutional and powdery.  But Trader Joe has managed to make them work.  Again, if you don’t want to use these, mashed potatoes are beyond easy to whip up on your own.   But let’s just make note of the fact that Trader Joe’s has perfected the art of freezing.  They can do no wrong.

After layering the bbq and the mashed potatoes, top the dish with some shredded cheese (Trader Joe’s used cheddar, I used gouda).  Stick it in the oven until the cheese melts and you’re good to go.  It works because the meat is sitting in bbq sauce, just like a good shepherd’s pie makes a thick gravy.  It also works because you’ve got your meat and starch all in one place.  All you need is a salad and you’re good to go.
