Two minute and creamy. Helloooooo those are pretty much the best words ever – especially if used in the same sentence. Actually, that sentence could get real dirty real fast, now that I’m thinking about it – EWW get your mind out of the gutter!
This is the perfect way to jazz up your everyday midweek salad. And if you use light mayo, it’s pretty healthy. Rule of thumb: the fewer the ingredients, the less opportunity to destroy your diet. This recipe (makes enough for two side salads) from The Kitchn is so easy I’m copying it here in case you don’t feel like clicking out:
1 teaspoon Dijon mustard, or other grainy mustard
1 1/2 tablespoons mayonnaise
Fresh pepper, to taste
1 tablespoon champagne vinegar
Basically, just whisk all the ingredients together. It takes so little time that I whipped up a second batch mid-meal and it was done before we got through one commercial. It also works as a dip for veggies, which means you could be the loser who brings veggies and dip to the Super Bowl party this weekend.
