Over the weekend I had a few ingredients that had about one day left in em so I put them all in a dish in the hopes it would turn into something edible. It’s ended up being all the ingredients of a broccoli casserole without the binding agent. Since my binding agent is cream of mushroom soup, this is a healthy improvement.
Just put cooked broccoli (mine had been blanched; roasted would work too) and sliced mushrooms in a dish. Top with shredded cheese and breadcrumbs. Bake at 425 for about 15 minutes. Season with salt and pepper and top with some sour cream.
The mushrooms release some juices when they cook that start to mix with the breadcrumbs for a slight thickener and the cheese/breadcrumb topping becomes a crispy top shell. This side dish is sort of like a casserole without the casserole.
