Everyone knows the components of a standard caprese: tomato, mozzarella, and basil. Drizzle with some olive oil, maybe a pinch of salt, maaaaybe some balsamic. That salad is one of my all-time favorites, especially if it’s made with burrata. But if you’re ever looking to switch it up a bit, I suggest the following, which still follows the same ‘mater/white cheese/herb program.

This time, however, you’ll change up the type of white cheese and the sort of herb. This new caprese salad will be made with a sliced, firm tomato, slices of goat cheese, and fresh parsley. Again, drizzle some olive oil on the top and just a touch of balsamic. It’s a lovely spring salad.
