Surprise surprise! Another small kitchen recipe that involves chicken sausage! In all fairness, it’s been a while since I’ve made a similar dish (see: here for the most recent one) and I was overdue for an easy meal like this. This time, I changed up the base for a whole different taste.
Start by sautéing sliced baby zucchini (or regular zucchini sliced and quartered so it’s in smaller chunks) and sliced chicken sausage in olive oil. After about two minutes, add in as much broccoli rice as you see fit. For me, this was about half a package (from Trader Joe’s) to go with one full package each of chicken sausage (5 links of the pre-cooked stuff) and one package of baby zucchini (equivalent to one or two regular zucchini. Here’s where you add your seasoning. I decided to use everything bagel seasoning this time because it works with EVERYTHING. It adds tons of flavor with zero effort. Some cheese was the finishing touch (isn’t it always?). I tried this two ways: goat cheese and shredded Mexican blend. I preferred the goat cheese, but my beau was more into the cheddar mix.
It’s tough to get much healthier than this meal. And it’s a one pot wonder. You’re welcome.
