This is one of those meals I really hesitated to post. It’s way too easy. You’re going to roll your eyes at me. But then I realized it had taken me this many years to realize I should prepare this all-too-easy combo of ingredients; and if I never thought to make it, perhaps you haven’t either.
For the protein, simply simmer chicken in your favorite BBQ sauce til it’s cooked through. I like to break it up into chunks/shred it as it’s cooking so it soaks up all the sauce. Now that that’s taken care of, focus on your veggie. Sauté sliced zucchini and mushrooms in olive oil with everything bagel seasoning. Once it’s cooked to your liking, turn off the heat, stir in/top with shredded cheese, and cover the pot with a lid so the cheese can melt nicely.
What I like about this dish is that these veggies happen to release a little liquid as they cook so when that’s mixed with the steam created by covering the pot and the shredded cheese, you get almost a very light cheese sauce. Overall, a nice healthy meal that takes a total of about 15-20 minutes to make, including all chopping. And it’s also nice to add a side of sliced avocado because WHY THE HECK NOT?!
