I was home alone on Wednesday with a fridge to clear out so I decided to throw together a bean salad with tons of rando ingredients. It took no time and was actually super tasty and filling. Here’s what I used:
- Can of Black Eyed Peas, drained and rinsed
- 1/3 lb Sausalito Turkey (I ordered mine from Fresh Direct, but you can get any spiced turkey from your deli counter and chop it up)
- Cherry Tomatoes (quartered)
- Avocado (at least 1/2), diced
- Cotija Cheese, crumbled
- 1/2 Lemon, juiced
- Dill, hadfull
It was sort of a mishmash of things but really worked! Note: a lot of these ingredients are salty (canned beans, spiced turkey, and cotija cheese) so you don’t need to add any salt. You good, girl.
After tossing it all together, I realized could be tasty as a taco – with meaty things like turkey and avocado, how could it be bad? Guess what – I was right. I thoroughly enjoyed this salad served at room temp in a warm tortilla with a dollop of sour cream.
