You know those frozen mixed veggies? Guess what: the leftovers can be the base of a fantastic scramble. My favorite of these frozen veggie mixes is the soycatash from Trader Joe’s. Basically, it’s edamame, corn, and chopped bell pepper. If you don’t have a TJ’s, you can still easily make this scramble by using frozen edamame and frozen sweet corn (peppers are unnecessary). The best part about these frozen veggies (vs. fresh or canned) is that you can take only what you need from the bag and leave the rest in the freezer. Simply warm in the pan before adding your egg mixture. In my case, I was using leftover veggies from the previous night’s supper. I mixed it with two eggs and a handful of shredded jack cheese. Scramble with salt and pepper. Top with fresh avocado and a dollop of sour cream. I love the sweetness of the corn and the more firm texture of the edamame. It’s like a mild version of a Southwest scramble and if all works really well together.
