Broccoli Cabbage Caesar Salad

A while ago I saved this recipe for broccoli Caesar salad. On Sunday, I decided it was time to make it because it seemed like a perfect backyard side dish and we were planning to grill our supper.

Pre-dressing

…but, while this is an easy salad to make, I decided to make it even easier. I wanted few ingredients and figured the best way to do it would be to use bottled Caesar salad dressing. If you go that route, it’s super simple. Just steam a head of broccoli florets until it’s bright green but still very crunchy. Toss the broccoli with julienned red cabbage, toasted pine nuts, the salad dressing, and some fresh shaved Parmesan.

Since I brought the leftovers for lunch the next day, I can also tell you that this travels really well and keeps nicely overnight. That’s what you get when you use such hearty veggies like broccoli and cabbage. Hearty and gorgeous, by the way. That bright green and purple looked absolutely lovely!
