Shrimp and Edamame Farro Bowls

Who doesn’t love a good grain bowl? This one utilizes some Asian flavors and comes together in about 15 minutes.

Start by cooking up some farro. While it’s cooking, I got some frozen edamame ready. I actually used Trader Joe’s soycatash mix – if you don’t have this, use frozen edamame and frozen corn. Easy fix. Meanwhile, cook up some shrimp with a marinade made with soy sauce, ground ginger, garlic powder, and a pinch of cayenne. I used [thawed] frozen cooked shrimp so they shrunk up quite a bit when I warmed them in the pan with the sauce, but the flavor was good so if you can’t get your hands on fresh, this is a great substitute. Build your bowls with the farro, edamame, corn, shrimp (with any sauce that’s left in the pan), a drizzle of sesame oil, and some sriracha mayo. Go ahead and sprinkle some scallions on the top. The plan was to have avocado in this bowl, and I had one ready to go, but it wasn’t ripe…so just imagine this with an avocado on there as well.

Here’s how I know this was an easy meal: I cooked the whole thing while tipsy after a work happy hour. And I kept the kitchen very clean while doing so. If that’ not indicative of a winning dish, I don’t know what is.
