Cod is a super simple fish to prepare. It takes no time and is easily found in frozen filets. If you’ve got a simple recipe like this tucked away, you’ll be able to get supper on the table in no time…as long as you remember to defrost the fish, which always seems to be my biggest hurdle.

Mix butter with smoked paprika, minced garlic, and fresh parsley. Spread over cod, and top with panko and parmesan. Bake for 20-25 minutes at 400.

I prepared this the same night as this cauliflower dish and used some of the same ingredients so a) they wouldn’t go to waste and b) the flavors would work together. I mixed things up just enough (ie: smoked paprika and garlic) to keep things complementary without being one-note.
