Much like this turkey sandwich, my recent lunch was a fridge cleanout moment. Also like that sandwich, this one utilizes a jazzed up mayo. And let me tell you – this was jazzy. So good that I’ll definitely be repeating the combo. It was ultra satisfying and I liked just incorporating my side dish (kimchi) into the meal itself. See? Sandwiches don’t have to be boring or difficult!

Toast up some sourdough and on one side, mash an avocado (I used a little less than 1/2) and on the other spread some kimchi mayo. To make the kimchi mayo, simply chop up some kimchi and mix it into mayo (I use Duke’s). To the avo side, add some fresh mozzarella slices. I used some local mozz that was just fab. Grind some pink salt on that side, add some deli turkey, close the whole thing up, and enjoy.
