Mirepoix

We have reached the point where it just feels so freakin cold…with no real signs of relief. This is when winter starts getting tough. Thankfully we have some fun stuff going on to serve as a distraction.

My beau did a 10K over the weekend and for once V and I said nopeeee we’ll pass on the cheering in the freezing cold and just see you at home. While he ran, Finn and I stayed busy by making signs so it still felt jolly. We also enjoyed a nice bagel breakfast at home from our fave Bo’s to keep things feeling celebratory.

For Taco Tuesday this week I did crock pot salsa chicken…on Monday evening. All I needed to do was grab it from the fridge, along with some rice and veggies I’d already taken down from the freezer, do a little microwave magic, and supper was ready. Not only that, but cleanup was done too. It was so nice to come home from work and have ZERO to do without resorting to takeout.

Albert turned 39 on the 4th but since he had just gotten back very late the night before from a longer-than-expected trip to New Orleans for the Sugar Bowl, he was so exhausted and not in a party party mood. Rather than force it, we decided to do a bday re-do the following Saturday. We got tickets to the St. John’s game and had ourselves a blast.
