Lentil Salad

A microwavable pouch of lentils was quite the revelation. When I saw them at Target, I grabbed the and decided I’d figure out how to use them later. Black lentils are high in fiber, protein, and antioxidants – quite the workhouse for something that’s ready in 90 seconds. Maybe they lose some of the vitamins when microwaved, but they’re so packed with nutrients, that I think they’re still a crazy healthy choice.

Start by microwaving a package of black lentils (Target’s Good & Gather private label). Once they’ve cooked a bit, toss with chopped bell pepper, torn fresh basil, mozzarella pearls, a drizzle of good olive oil, maldon salt, and cracked pepper. It’s a super simple side dish that works extremely well as the bed for some chicken.
