Corgi Jianbing

After my coworker raved about Corgi Jiabing for 3 weeks in a row, I decided to check out the food truck for myself.

First you need to know what a jianbing is. (Because, I’ll be honest, I didn’t.) It’s a Chinese street food that’s commonly eaten for breakfast. It’s a multigrain flour crepe that’s then has a layer of egg spread over it to make the wrap an eggy crepe. Then it’s filled with all sorts of stuff and because of that egg (and filling of choice), it’s like a BEC but wilder. This food truck serves it plain or jing style, which means there’s scallions, cilantro, Chinese pickle, special sauce, and a thin crispy cracker. Once you add your fillings, the whole thing is folded over itself and that cracker makes it like a Chinese crunchwrap.

I got mine Jing style with spam, cabbage, and spicy enoki. I want to try other fillings, but honestly this combo was pretty epic and I may just need to keep repeating it. And I will be visiting this truck on repeat because I live something easy and handheld, it was quite filling, and $14.25 is reasonable when considering all corporate lunch options.
