Tomato Soup with Chimichurri Rice and Sausage

I’m a big fan of Trader Joe’s demos.  All they ever do is take two of their products that aren’t supposed to go together and show you that, yes, they are perfect together.  I don’t know who thinks up these combos – probably a stoner stock boy – but they are almost always great and make me go “why didn’t I think of that?”

In a recent demo they mixed their roasted red pepper and tomato soup with the frozen chimichurri rice.  The rice only takes about 5 minutes to heat and has tons of flavor.  If you’re not working with a Trader Joe’s, this recipe would be just as good with any storebought tomato soup and any Spanish or yellow rice.  To prove I’m better than a stoner, I took the recipe one step further by adding sliced jalapeno chicken sausage and made it a full meal.
