Cucumber Avocado Salad with Parsley, Sriracha, and Mayo

Months ago, I saw this instagram on Deb Perelman’s (of Smitten Kitchen) feed.  It was the simplest salad made with stuff just lying around the fridge, but it just looked so good.  It’s hard to go wrong when the main ingredients are avocado and cucumber.

Cubes of avocado and cucumber are dressed with a mixture of mayo (I used 1 heaping tablespoon for 1 whole avocado and 1 whole cucumber), sriracha, parsley, lemon juice, and salt.  Everything is done to taste.

Do me a favor and please please please refer to the pic on her Insta via the link above.  It’s so much prettier.  Mine is a terrible representation of this perfect dish because I only remembered to take a pic after I mixed it all up into a gloopy mess.  Just because my picture isn’t pretty doesn’t mean it didn’t taste fabulous.
